  1. Making the biscuit base:
  2. Grease a tin and line with parchment paper
  3. Add the ingredients into a bowl and mix to combine
  4. Transfer the biscuit mixture into the tin
  5. Smooth out using the back of a spoon
  6. Chill in the fridge – 20 minutes
  7. Making the base:
  8. Add the ingredient into a heatproof bowl
  9. Heat in a microwave until boiling
  10. Then add the soaked gelatine and mix until dissolved
  11. Add the cream mixture into the appliance bowl
  12. Then add the next ingredients

  14. Whisk – 5 minutes, speed Max
  15. Then add the cream mixture into the tin and spread evenly
  16. Chill in the fridge – 1 hour
  17. Making the strawberry jelly:
  18. Add the ingredients into a saucepan
  19. Cook until the strawberries have broken down – 10 minutes, medium-high heat
  20. Strain the strawberries through a sieve into a jug to remove all the pulp
  21. Let cool at room temperature – 10 minutes
  22. Then add the soaked gelatine and mix until dissolved
  23. Pour the strawberry jelly over the cheesecake
  24. Chill in fridge until set – 3 hours
  25. Serve
