Delicious lightly fried aubergine in an aromatic tomato and lentil sauce. Serve with rice, naan or chapati and a sprinkling of coriander. You can swap the tinned lentils for dried but you will need to also add more stock.

Step preview

  1. Line a baking tray with paper towels
  2. Add the ingredients into a clean bowl and mix to coat
  3. Fit the Stir Tool
  4. Working in batches, add some of the coated eggplant into the appliance bowl
  5. Cook - 5 minutes, 120ºC, speed 2
  6. Place the cooked eggplant on paper towels to drain any excess oil
  7. Repeat the same cooking process with the remaining eggplant
  8. Clean the appliance bowl and fit the Stir Tool
  9. Assemble the Direct Prep attachment with the thick slicing disc, and turn it to position 1
  10. Add oil into the appliance bowl
  11. Heat - 1 minute, 140ºC
  12. Then slice onion into the appliance bowl
  13. Cook - 5 minutes, 120ºC, speed 3
  14. Then add the next ingredients
  15. Cook - 2 minutes, 120ºC, speed 3
  16. Then add the next ingredients
  17. Cook - 1 minute, 120ºC, speed 3
  18. Then add the next ingredients
  19. Cook - 10 minutes, 94ºC, speed 2
  20. Then add cooked eggplant
  21. Cook - 25 minutes, 94ºC, speed 2
  22. Then add cilantro
  23. Stir - 30 seconds, speed 4
  24. Serve
