In Korea, this dish is served as street food, usually barbecued over an open flame; bul means fire, and dak means chicken. The addition of cheese may seem an odd one, but mozzarella is a popular ingredient in Korea, and you'll see why when you pull the bubbling dish from the oven. Step preview

  1. Add the ingredients into a bowl until covered
  2. Soak – 10 minutes
  3. Then drain and set aside
  4. Add the ingredients into a clean bowl and mix to combine

  7. Stir – 140ºC, speed 3
  8. Then add the chicken mixture and water
  9. Stir – 7 minutes, 98ºC, speed 3
  10. Transfer the rice cakes
  11. Stir – 10 minutes, 98ºC, speed 2
  12. Preheat the grill – high heat
  13. Add the chicken mixture into a heatproof skillet or casserole dish
  14. Top with cheese
  15. Grill until cheese is golden and bubbling – 3 minutes, high heat
  16. Top with the ingredients
  17. Serve
