A quick and simple curry recipe for using up the leftover potatoes in your kitchen. If you also have a handful of cherry tomatoes or a salad tomato lurking in the fridge, roughly chop and add this also. Serve with rice or a 50/50 mixture of rice and lentils for added protein. If you have fresh coriander remove the leaves and reserve them for garnish before finely chopping the stalks in the food processor bowl. Add the chopped stalks into the curry with the stock and coconut milk for a flavour boost. If the potatoes have started to sprout simply use the pointed end of your vegetable peeler or a teaspoon to remove and discard them before peeling - the potatoes are still good to eat, so don’t discard them.   2. Place a clean bowl underneath the attachment
  3. Grate onion into the bowl using the pusher
  4. Add oil into a cast iron skillet
  5. Heat until hot – medium-high heat
  6. Add the grated onion into the pan
  7. Sauté – 3-4 minutes, medium-high heat
  8. Then add the next ingredients
  9. Cook while stirring regularly – 5 minutes, medium heat
  10. Remove the grating disc, reverse, and fit the slicing disc
  11. Place a clean bowl underneath the attachment
  12. Slice potatoes into the bowl using the pusher
  13. Transfer the sliced potatoes into the pan
  14. Then add the next ingredient
  15. Stir until the vegetables are coated in spices
  16. Sauté – 3-4 minutes, medium-high heat
  17. Then add the next ingredients into the pan
  18. Stir to combine
  19. Season to taste
  20. Simmer – 8-10 minutes, medium heat
  21. Then add the next ingredient
  22. Cook until the potatoes are cooked through – 2 minutes, medium-high heat
  23. Serve and garnish, if desired
  24. Serve
