These great America inspired chicken sandwiches are packed full of flavour. Use your favourite hot honey for a sweet spicy kick. You can confit the garlic up to two weeks ahead and keep chilled. Bring to room temperature before using to make the mayo. You will make more confit garlic then you use, but you can use it most places you would use normal garlic.

Step preview

  1. Add the ingredients into a bowl
  2. Mix to coat and then cover with plastic wrap
  3. Marinade in the fridge overnight
  4. Preheat the oven - 120ºC
  5. Add the ingredients into a roasting tin
  6. Cover the tin with aluminium foil
  7. Roast - 2 hours, 120ºC
  8. Remove from the oven and let cool
  9. Fit the Whisk Tool
  10. Add the ingredients into the appliance bowl
  11. Then crush 3 confit garlic cloves into a paste and add into the appliance bowl
  12. Whisk until combined - 1 minute, speed 5
  13. Then add the next ingredients while the machine is running
  14. Whisk until incorporated - 10 minutes, speed Max
  15. Transfer the garlic mayo into a clean bowl and set aside
  16. Add the ingredients into a clean bowl and mix to combine
  17. Coat each chicken thigh in the flour mixture
  18. Then dip back in the buttermilk again and coat in flour
  19. Line a baking tray with paper towels
  20. Clean the appliance bowl
  21. Add oil into the appliance bowl
  22. Heat - 5 minutes, 150ºC, speed off
  23. Then add one chicken thigh
  24. Cook until browned - 5 minutes, 150ºC, speed off
  25. Then turn the chicken over
  26. Cook until browned - 5 minutes, 150ºC, speed off
  27. Place the cooked chicken on the lined tray
  28. Repeat the same with the remaining chicken thighs
  29. Coat the chicken with hot honey
  30. Assemble burgers:
  31. Add chicken to brioche buns
  32. Top with coleslaw and pickles
  33. Serve
