A fragrant cake flavoured with the classic combination of Earl Grey, lemon and honey. We have finished our loaf cake with a honey and lemon, but you could try drizzling with a lemon water icing.

Step preview

  1. Add milk into a saucepan
  2. Heat until just simmering - medium heat
  3. Remove the saucepan from the heat and add Earl grey teabags
  4. Leave to infuse - 30 minutes
  5. Making the sponge:
  6. Preheat the oven - 160ºC
  7. Grease a loaf tin and line with parchment paper
  8. Fit the K-Beater
  9. Add the ingredients into the appliance bowl
  10. Mix until combined - 3 minutes, speed 2
  11. Then add the next ingredients
  12. Mix until smooth - 2 minutes, speed 2
  13. Then add the infused milk
  14. Mix until combined - 2 minutes, speed Min
  15. Transfer the batter into the tin
  16. Bake until a skewer inserted comes out clean, covering with foil to prevent burning, if necessary - 1 hour, 160ºC
  17. Remove from the oven and let cool in the tin - 10 minutes
  18. Making the syrup:
  19. Add honey and lemon juice into a clean bowl and stir by hand to combine
  20. Transfer the cake onto a cooling rack
  21. Brush the honey mixture over the cake while it is still warm
  22. Let cool completely
  23. Serve
