Step preview

  1. Preheat the oven – 170ºC
  2. Line two baking trays with parchment paper
  3. Fit the Whisk Tool
  4. Add egg whites into the appliance bowl
  5. Whisk until stiff peaks form – 1 minute 15 seconds, speed Max
  6. Transfer the whisked egg whites into a clean bowl and set aside
  7. Clean the appliance bowl and fit the K-Beater
  8. Add the ingredients into the appliance bowl
  9. Mix until combined – 2 minutes, speed Min
  10. Remove the K-Beater
  11. Using a spatula, fold the egg whites into the almond mixture
  12. Transfer the cookie batter into a piping bag
  13. Pipe 15 tablespoon-sized discs onto each baking tray, spacing them apart
  14. Top each of the biscuits with a sprinkle of flaked almonds
  15. Bake until golden brown on the bottom of the cookie – 15 minutes, 170ºC
  16. Remove from the oven and let cool completely
  17. Serve
