Spiced potato balls, dipped in batter and deep fried are a popular street food served across India, this recipe is a shortcut version made with shop bought curry paste and leftover cooked potato in mind. Serve with a variety of chutneys and pickles as a snack or starter.

  1. Making the potato balls:
  2. Line a baking tray with parchment paper
  3. Fit the Stir Tool
  4. Add oil into the appliance bowl, fit the splashguard
  5. Heat until hot – 1 minute, 120ºC, speed Off
  6. Then add the next ingredients
  7. Cook until fragrant – 2 minutes, 120ºC, speed Stir 2
  8. Then add curry paste
  9. Stir until combined – 2 minutes, 110ºC, speed Stir 2
  10. Remove the Stir Tool, fit the K-Beater
  11. Add the ingredients into the appliance bowl
  12. Mix until combined and then scrape the bowl – 1 minute, speed Min
  13. Shape the mixture into 6-8 balls and place on the baking tray
  14. Chill in the fridge – 30 minutes
  15. Making the batter:
  16. Fit the Knife Blade to the Food Processor attachment
  17. Add the ingredients into the attachment
  18. Pulse until combined
  19. Then add water while the machine is running
  20. Mix until combined – 30 seconds, speed 3
  21. Transfer the batter into a clean bowl and set aside
  22. Line a plate with paper towel
  23. Fill a large, heavy-based saucepan with oil, no more than 1/3 full
  24. Heat until the oil reaches 180ºC or until bubbling gently – medium heat
  25. Then add flour into a clean bowl
  26. Roll each potato ball in the flour and then dip in the batter
  27. Carefully place the potato balls into the hot oil
  28. Fry in batches of 2-3 until golden brown – medium-high heat
  29. Using a slotted spoon, transfer the fried potato balls onto the plate
  30. Serve
