This Brioche is deliciously buttery and chocolatey. Make this indulgent bread for a special breakfast or an afternoon tea. We've added chopped hazelnuts, but you can leave them out if you prefer.

  1. Making the dough:

  3. Add the ingredients into the appliance bowl
  4. Knead until combined - 5 minutes, speed Min
  5. Then add butter
  6. Knead until a dough has formed - 5 minutes, speed Min
  7. Cover the bowl with a kitchen towel
  8. Prove until doubled in size - 1 hour 30 minutes
  9. Making the filling:
  10. Clean the appliance bowl and fit the K-Beater
  11. Add the ingredients into the appliance bowl
  12. Mix until combined - 1 minute, speed 2
  13. Grease a loaf tin
  14. Transfer the dough onto a lightly floured work surface
  15. Roll out into a large rectangle
  16. Spread the chocolate filling over the dough
  17. Starting from the longer side, roll the dough into a log
  18. Leave a gap about 5 cm at one end, then cut the dough lengthways down the centre
  19. Turn the two cut edges to face upwards
  20. Twist the dough lengths around each other
  21. Place the shaped dough into the tin in a spiral shape
  22. Cover with a kitchen towel and prove until doubled in size - 30 minutes
  23. Preheat the oven - 180ºC
  24. Brush the dough with beaten egg
  25. Bake until golden brown - 30 minutes, 180ºC
  26. Sprinkle with chopped nuts
  27. Serve
