This simple crusty Italian white bread is perfect for dipping into soups or sauces. To make an Italian-style sandwich, fill it with salami, prosciutto or cheese and rocket leaves. Make the dough in advance and let rest overnight.

Step preview

  1. Fit the Dough Tool
  2. Add the ingredients into the appliance bowl
  3. Knead until well combined – 2 minutes, speed 2
  4. Transfer the dough to a clean bowl and let rest overnight
  5. Clean the appliance bowl and fit the Dough Tool
  6. Transfer the dough into the appliance bowl
  7. Then add the next ingredients
  8. Knead until homogenous – 10 minutes, speed 1
  9. Remove the Dough Tool, fit the splashguard
  10. Prove until doubled in size - 1 hour 30 minutes, 30°C, speed Off
  11. Line a baking tray with parchment paper and set aside
  12. Transfer the dough to a lightly floured work surface
  13. Cut the dough in half
  14. Take one half and gently pull the edges into the centre
  15. Pull the top edge over and tuck under the dough
  16. Form gently into a ciabatta shape
  17. Place the dough on the baking tray and cover with a well-floured towel
  18. Repeat the same process with the other half of the dough
  19. Let rest – 30 minutes
  20. Preheat the oven – 220ºC
  21. Bake the ciabatta until golden brown – 40 minutes, 220ºC
  22. Remove from the oven and let cool
  23. Serve
