Step preview

  1. Fit the Coarse grating disc to the Food Processor attachment
  2. Working in batches, grate courgettes into the attachment – speed 1
  3. Transfer the grated courgette into a colander
  4. Then add salt and mix until well combined
  5. Let drain – 2 hours
  6. Add the courgettes to a clean tea towel and squeeze out as much water as possible
  7. Fit the K-Beater
  8. Add the drained courgettes into the appliance bowl
  9. Then add the next ingredients
  10. Mix until just combined – 30 seconds, speed Min

  13. Line a plate with paper towels
  14. Add olive oil into a frying pan, enough to cover the base
  15. Heat until hot – medium hot
  16. Dip a dessert spoon in water and add spoonfuls of the courgette mixture into the pan, spacing them apart
  17. Fry on both sides until golden brown and cooked through – 2 minutes, medium heat
  18. Transfer the fritters to the plate
  19. Repeat the same process with the remaining mixture, adding more oil into the frying pan, if needed
  20. Serve
