A shrub is a fruit-based vinegar syrup that is used in drinks and cocktails. Mix this one with soda and crushed ice for a refreshing drink or mix with soda and gin for a delicious cocktail. Put the shrub in a 1 litre sterilised bottle and store in the fridge for up to one month.

Step preview

  1. Working in batches, add the ingredients into the Blender attachment
  2. Attach the Blender to the machine
  3. Blend until smooth – 30 seconds, speed Max
  4. Transfer the blended rhubarb into the warming bowl
  5. Fit the K-Beater
  6. Then add the next ingredients
  7. Heat until the liquid has reduced - 10 minutes, heat setting 7, speed Stir 3
  8. Let cool slightly and then remove the basil leaves
  9. Then add vinegar
  10. Mix until combined - 2 minutes, speed Min
  11. Strain the mixture through a muslin cloth into a jug and let cool
  12. Pour the shrub into a sterilised bottle
  13. Chill in the fridge
  14. Use as desired
