A tangy curd great for desserts like tarts. We've made ours with bottled pink grapefruit juice but if you can use fresh if you can get it. Store this curd in a sterilised jar in the fridge for 1 - 2 weeks.

  3. Heat until butter has melted – 5 minutes, 60ºC, speed Stir 1
  4. Cook until combined - 10 minutes, 85ºC, speed Stir 1
  5. Cook until thickened - 10 minutes, 95ºC, speed Stir 1
  6. Let cool slightly
  7. Transfer the curd into a jar and let cool until set
  8. Serve
