These white chocolate truffles are the ideal treat to satisfy your sweet cravings or to give as a gift to loved ones. They're delicious and great served as they are or topped with chopped pistachios or freeze-dried raspberries.

  1. Making the filling:
  2. Fit the Creaming Beater
  3. Add the ingredients into the appliance bowl, fit the splashguard
  4. Heat until melted - 5 minutes, 80ºC, speed Stir 2
  5. Transfer the chocolate mixture into a clean bowl and cover with plastic wrap
  6. Chill in the fridge overnight for best results
  7. Shaping the filling:
  8. Line a tray with parchment paper
  9. Take 1 heaped teaspoon of chilled filling, quickly roll into a ball and place on the tray
  10. Repeat the same with the rest of the filling
  11. Chill in the freezer - 30 minutes
  12. Temper the chocolate:
  13. Clean the appliance bowl and fit the Creaming Beater
  14. Add chocolate into the appliance bowl
  15. Heat until melted - 10 minutes, 45ºC, speed Stir 2
  16. Coat the chocolate:
  17. Line a tray with parchment paper
  18. Remove the chilled balls from the freezer
  19. Add two chocolate balls into the tempered chocolate
  20. Use a fork to transfer the truffles onto the lined tray, removing any excess chocolate
  21. Repeat the same process with the remaining truffles
  22. Chill in the fridge until set - 2 hours
  23. Serve
