Step preview

  1. Preheat the oven - 180ºC
  2. Place the ramekins in a large, deep roasting dish and set aside
  3. Fit the Creaming Beater
  4. Add the ingredients into the appliance bowl
  5. Cook until the chocolate has melted - 5 minutes, 80ºC, speed Off
  6. Strain the mixture through a sieve into a jug and set aside
  7. Clean the appliance bowl and fit the Creaming Beater
  8. Add the ingredients into the appliance bowl, fit the splashguard
  9. Mix until combined - 1 minute, speed 4
  10. Then slowly add the cream mixture from the jug while the machine is running
  11. Mix until combined - 2 minutes, speed Min
  12. Strain the mixture through a sieve into a clean jug
  13. Fill the baking dish with hot water from the tap until 3/4 full
  14. Transfer the mixture from the appliance bowl into the ramekins until 3/4 full
  15. Bake until they wobble a bit like a jelly in the middle - 20-25 minutes, 180ºC
  16. Remove from the oven and transfer onto a cooling rack to cool - 20 minutes
  17. Chill in the fridge overnight
  18. Sprinkle 1 tsp of sugar over the top
  19. Use a blowtorch to caramelise the sugar or place under a hot grill until golden brown
  20. Serve
