Hindbærsnitter are classic Danish pastry squares made from two layers of buttery shortcrust pastry filled with raspberry jam and topped with a sweet icing glaze. They can be decorated with colourful sprinkles or freeze-dried raspberries. Often enjoyed with coffee, they're a beloved treat in Danish bakeries.

  1. Making the pastry:
  2. Fit the K-Beater
  3. Add the ingredients into the appliance bowl
  4. Mix until combined - 5 minutes, speed Min
  5. Then add egg
  6. Mix until incorporated - 1 minute, speed 1
  7. Wrap the dough in plastic wrap and chill in the fridge - 20 minutes
  8. Preheat the oven - 175°C
  9. Line two baking trays with parchment paper
  10. Transfer the pastry to a lightly floured work surface and roll out until 5 mm thick
  11. Cut the dough into 2 equally sized rectangles and place each onto a baking tray
  12. Poke holes all over the pastry using a fork
  13. Bake until light golden - 10 minutes, 175°C
  14. Remove from the oven and let cool completely
  15. Clean the appliance bowl and fit the K-Beater
  16. Add the ingredients into the appliance bowl
  17. Mix until thick, slightly running consistency, adding more water if needed - 1 minute, speed Min
  18. Add jam onto one sheet of pastry and spread evenly
  19. Top with another sheet of pastry to create a sandwich
  20. Add icing onto the top of the pastry and spread evenly
  21. Decorate with sprinkles
  22. Let set - 15 minutes
  23. Cut into 12 squares
  24. Serve
