Lusikkaleivät, or "spoon cookies," are traditional Finnish shortbread-style biscuits made by browning the butter for that nutty flavour. They are made by pressing dough with a teaspoon to create their signature oval shape and then sandwiched together with a layer of raspberry jam and rolled in sugar to make a delicious treat!

Step preview

  1. Add butter into a saucepan
  2. Heat, stirring occasionally, until the butter starts browning - medium heat
  3. Remove from the heat and let cool to room temperature
  4. Preheat the oven - 175ºC
  5. Line a baking tray with parchment paper
  6. Fit the K-Beater
  7. Transfer the browned butter into the appliance bowl
  8. Then add the next ingredients
  9. Mix until combined - 1 minute, speed 1
  10. Use an oval teaspoon to scoop the dough and press it into your palm to flatten
  11. Carefully push the dough out of the spoon and onto the prepared baking tray
  12. Repeat the same process with the remaining dough and space the cookies 2 cm apart
  13. Bake until barely coloured - 12 minutes, 175ºC
  14. Remove from the oven and let cool completely
  15. Spread 0.5 tsp of jam onto the flat side of the cookie and sandwich together with another cookie
  16. Add sugar into a small bowl
  17. Roll the sandwiched cookie in sugar
  18. Repeat the same process with the remaining cookies
  19. Serve
