This recipe yields seven soft and delicious fried flatbreads, traditionally known as Shelpeks from Kazakhstan. They can be enjoyed hot or cold as a snack or a side to a main meal. It is customary in Kazakhstan to prepare seven Shelpeks on Fridays.

Step preview

  1. Add the ingredients into the appliance bowl
  2. Heat until the salt has dissolved - 2 minutes, 85ºC, speed Off
  3. Fit the Dough Tool
  4. Then add flour
  5. Knead until the dough has formed - 10 minutes, speed 1
  6. Transfer the dough to a clean bowl
  7. Let rest - 1 hour
  8. Transfer the dough to a lightly floured work surface
  9. Divide the dough into 7 equal pieces
  10. Form each piece into a ball
  11. Roll out each ball into a circle, about 8-10 mm thick to fit your frying pan’s diameter
  12. Line a plate with paper towels
  13. Add oil into the frying pan
  14. Heat until hot - high heat
  15. Take one flatbread and fry on both sides until golden brown - 15-20 seconds
  16. Transfer the flatbread to the lined plate
  17. Repeat the same process with the remaining dough
  18. Serve
