Nauryz Kozhe is a traditional soup made in Kasakhstan at Nauryz, the new year and the arrival of spring, it is a celebration of unity, renewal and deep-rooted family traditions. Kozhe is a cold drink traditionally consumed by nomads, helping them cope with the heat in summer, its main ingredients are barley, salt, water, milk and kefir. Nauryz kozhe is a thicker, richer and more substantial version of kozhe, made with seven ingredients, including meat- such as horse, mutton, or beef. Kurt, a dried cheese, made from fermented milk, Kefir, or Ayran, a salted yoghurt drink, is added to the broth at the end of cooking for flavour. This soup is served to family, guests and neighbours, representing abundance, health, and prosperity.

Step preview

  1. Add the ingredients into a bowl
  2. Rinse well under cold water, then drain
  3. Then add hot water into the bowl until the grains are completely submerged and set aside to soak
  4. Add the ingredients into the appliance bowl, fit the splashguard
  5. Cook until boiling - 20 minutes, 150ºC, speed Off
  6. Cook the meat until is tender, and scoop out any foam from the broth while it is cooking - 2 hours, 92ºC, speed Off
  7. Remove the meat from the broth into a clean bowl
  8. Strain the broth through a fine mesh sieve into a clean bowl, then transfer back into the appliance bowl
  9. Fit the Stir Tool
  10. Cook until hot - 5 minutes, 105ºC, speed Stir 2
  11. Drain the soaked grains and then transfer them into the appliance bowl
  12. Cook until the grains are cooked through - 20 minutes, 105ºC, speed Stir 3
  13. Cut the meat into small pieces, removing any bones if necessary
  14. Add the meat back into the appliance bowl
  15. Stir until combined - 1 minute, speed Stir 1
  16. Ladle the broth to serving bowls
  17. Add kefir to the broth according to your taste
  18. Serve
