A French classic treat: crispy on the outside and spongy and soft on the inside, delicious served with tea or coffee. As a simple variation you could add zested citrus or other extracts or replace the chocolate with a simple dusting of icing sugar. For best results we recommend that you prepare the tin in advance and freeze it for one hour.

Step preview

  1. Grease a Madeleine tin
  2. Chill in the freezer for best results - 1 hour
  3. Fit the Whisk Tool
  4. Add the ingredients into the appliance bowl
  5. Whisk until light and fluffy - 2 minutes, speed Max
  6. Remove the Whisk Tool, fit the K-Beater
  7. Then add the next ingredients
  8. Mix until combined, then scrape the bowl - 20 seconds, speed Min
  9. Mix until combined - 10 seconds, speed Min
  10. Then add the melted butter
  11. Mix until combined - 20 seconds, speed Min
  12. Transfer the batter into a pipping bag
  13. Let rest - 30 minutes
  14. Preheat the oven - 190ºC
  15. Pipe about 1 Tbsp of mixture into each hole in the tin
  16. Tap the tin on a work surface to release the bubbles
  17. Bake until puffed up and golden - 8 minutes, 190°C
  18. Remove from the oven and let cool in the tin - 2 minutes
  19. Loosen the madeleines with a fork or palette knife
  20. Transfer the madeleines onto a cooling rack and let cool
  21. Dip each madeleine into the melted chocolate
  22. Let set at room temperature
  23. Serve
