Step preview

  1. Add the ingredients into a saucepan
  2. Heat, stirring occasionally, until the butter has melted - medium-high heat
  3. Grease a large bowl and set aside
  4. Fit the Dough Tool
  5. Transfer the milk mixture into the appliance bowl

  7. Knead until the dough has formed - about 5 minutes, speed Min
  8. Place the dough into the greased bowl and cover with a damp tea towel
  9. Prove until doubled in size - 1 hour 30 minutes
  10. Making the cinnamon butter:
  11. Clean the appliance bowl and fit the K-Beater
  12. Add the ingredients into the appliance bowl
  13. Mix until combined and then scrape the bowl - about 1 minute, speed 2
  14. Mix until combined - about 1 minute, speed 2
  15. Transfer the cinnamon butter into a clean bowl
  16. Transfer the dough onto a lightly floured work surface
  17. Flatten the dough slightly, bring the left side over the right side
  18. Then fold the right side over the left side
  19. Roll out the dough and shape into a ball
  20. Cover the dough with a tea towel and let rest - 10-20 minutes
  21. Grease baking trays and set aside
  22. Roll out the dough into a rectangle until 5 mm thick
  23. Spread the cinnamon butter evenly over the dough
  24. Roll the dough into a log, along the longest edge
  25. Divide the dough into 12 equal pieces
  26. Place the buns on the baking tray, spiral side up and space them apart evenly
  27. Cover with a damp tea towel and prove until doubled in size - 30 minutes
  28. Preheat the oven - 180ºC
  29. Bake the buns until they start to colour - 15 minutes, 180ºC
  30. Cover with foil and bake until golden brown - 10 minutes, 180ºC
  31. Remove from the oven and let cool in the tin
  32. Making the frosting:
  33. Clean the appliance bowl and fit the K-Beater
  34. Add the ingredients into the appliance bowl
  35. Mix until combined and then scrape the bowl - about 1 minute, speed 2
  36. Mix until smooth - about 20 seconds, speed 3
  37. Spread the frosting over the slightly warm buns
  38. Serve
