These little garlicky buns are full of creamy mozzarella and herbs. Perfect for picnics and BBQs. They are best eaten the day they are made.

Step preview

  1. Fit the Dough Tool
  2. Add the ingredients into the appliance bowl
  3. Let rest - 5 minutes
  4. Then add the next ingredients
  5. Knead until the dough has formed - about 5 minutes, speed Min
  6. Remove the bowl from the machine and cover with a damp tea towel
  7. Prove until doubled in size - 1 hour
  8. Line two baking trays with parchment paper
  9. Transfer the dough onto a lightly floured work surface
  10. Gently knead the dough to knock out excess air
  11. Divide the dough into 12 equal pieces
  12. Roll each piece into a tight ball
  13. Place the dough balls on the baking trays, spacing them apart evenly
  14. Cover with a damp tea towel and prove until doubled in size - 1 hour
  15. Preheat the oven - 170ºC
  16. Brush the rolls with beaten egg
  17. Bake until lightly golden - 20 minutes, 170ºC
  18. Remove the buns from the oven and let cool slightly
  19. Reduce the oven temperature - 150ºC
  20. Making the filling:
  21. Clean the appliance bowl and fit the K-Beater
  22. Add the ingredients into the appliance bowl
  23. Mix until combined - about 30 second, speed 1
  24. Transfer the filling into a pipping bag
  25. Slice a deep cross into each bun, being careful not to cut all the way through
  26. Pipe a line of filling in between each wedge and in the centre
  27. Making the garlic butter:
  28. Add the ingredients into a clean bowl and mix to combine
  29. Brush the buns with the garlic butter
  30. Bake until golden brown - 10 minutes, 150ºC
  31. Serve
