Step preview

  1. Fit the Stir Tool and Stir Assist Clip
  2. Add the ingredients into the appliance bowl
  3. Heat until melted - 2 minutes, 110ºC, speed Off
  4. Then add onion
  5. Cook until translucent - 5 minutes, 110ºC, speed Stir 2
  6. Remove the Stir Tool and Stir Assist Clip, and fit the Creaming Beater
  7. Add flour into the appliance bowl
  8. Cook until smooth - 4 minutes, 95ºC, speed Stir 1
  9. Fit the splashguard
  10. Then slowly add the milk while the machine is running
  11. Mix until combined - 3 minutes, speed Stir 1
  12. Then add the next ingredients
  13. Cook until the mixture has thickened - 15 minutes, 102ºC, speed Stir 1
  14. Then add ham
  15. Mix until combined - 2 minutes, speed Stir 1
  16. Transfer the dough into an oiled bowl and chill in the fridge overnight
  17. Add the ingredients into three clean bowls
  18. Transfer the dough to a work surface and divide into 24 equal pieces
  19. Roll each piece into a small log
  20. Take one dough log and roll in flour, followed by egg and breadcrumbs
  21. Repeat the same process with the remaining dough logs
  22. Line a plate with paper towel
  23. Fill a large, heavy-based saucepan with oil, no more than 1/3 full
  24. Heat until the oil reaches 175ºC or until bubbling gently - high heat
  25. Using a heatproof slotted spoon, carefully lower 12 croquetas into the hot oil, frying in smaller batches if your pot is smaller to avoid overcrowding
  26. Fry until golden brown - 5 minutes, medium-high
  27. Using a heatproof slotted spoon, transfer the croquetas onto the lined plate
  28. Repeat the same frying process with the remaining croquetas
  29. Serve
