Drømmekage, or Danish Dream Cake, is a traditional traybake from northern Denmark. It is a simple vanilla sponge made with basic ingredients - flour, sugar, eggs, milk and melted butter. Once baked and out of the oven, the cake is topped with a warm mixture of brown sugar, butter, milk and desiccated coconut, which caramelises into a sweet, slightly chewy layer. This comforting bake with a rich coconut topping, pairs perfectly with a cup of coffee or tea.

  1. Making the cake:
  2. Preheat the oven - 180ºC
  3. Grease a tin and line with parchment paper
  4. Fit the Whisk Tool
  5. Add the ingredients into the appliance bowl
  6. Whisk until light and fluffy - 3 minutes, speed Max
  7. Then add the next ingredients
  8. Whisk until combined - 30 seconds, speed Min
  9. Sift the next ingredients into a clean bowl
  10. Transfer the flour mixture into the appliance bowl
  11. Then add vanilla extract
  12. Whisk until smooth - 1 minute, speed Min
  13. Transfer the mixture into the prepared tin
  14. Bake until a skewer inserted comes out clean - 20-25 minutes, 180ºC
  15. Making the coconut topping:
  16. Clean the appliance bowl and fit the Creaming Beater
  17. Add butter into the appliance bowl
  18. Heat until the butter has melted - 3 minutes, 100°C, speed Off
  19. Then add the next ingredients
  20. Heat until the sugar has dissolved - 2 minutes, 100°C, speed Stir 1
  21. Then add coconut
  22. Mix until combined - 30 seconds, speed Stir 1
  23. Remove the cake from the tin
  24. Spread the coconut topping evenly on the cake
  25. Bake until the topping is golden - 10 minutes, 180ºC
  26. Remove from the oven and let cool slightly
  27. Serve
