This French macaron recipe makes a batch of the most dainty, delicate, and delicious macarons that will float right into your mouth and disappear. This basic macaron shell recipe can be adjusted by using any colour you desire. Fill with your favourite fillings, try buttercream and jam. Keep the shells unfilled in an airtight container between 4-6 days.

Step preview

  1. Grease baking trays and line with parchment paper
  2. Fit the Knife blade to the Food Processor attachment
  3. Add the ingredients into the attachment
  4. Blend until fine powder has formed - about 10 seconds, speed Max
  5. Sift the mixture into a clean bowl and set aside
  6. Fit the Whisk Tool
  7. Add egg whites into the appliance bowl
  8. Whisk until stiff peaks have formed - about 1 minute, speed Max
  9. Then add the next ingredients
  10. Whisk until combined - about 30 seconds, speed 2
  11. Then add sugar gradually while the machine is running
  12. Whisk until the meringue has a deep pink colour - about 5 minutes, speed Max
  13. Remove the appliance bowl from the machine
  14. Carefully fold 1/3 of the almond and icing sugar mixture into the meringue
  15. Then gradually fold the remaining almond and icing sugar mixture
  16. Fold until the mixture resembles flowing lava and be able to fall into a figure eight without breaking
  17. Transfer the mixture into a piping bag fitted with medium round tip
  18. Pipe 2.5 cm rounds onto the baking trays
  19. Tap the baking trays on a counter gently several times to release any air bubbles
  20. Let rest to allow the macarons to form a skin - 1 hour
  21. Preheat the oven - 150ºC
  22. Bake the macarons, rotating the baking tray halfway through baking - 15 minutes, 150ºC
  23. Remove from the oven and let cool completely
  24. Use as desired
