Step preview

  1. Making the Swiss roll:
  2. Preheat the oven - 180ºC
  3. Line a Swiss roll tin with parchment paper
  4. Sift the ingredients into a bowl and set aside
  5. Fit the Whisk Tool
  6. Add the ingredients into the appliance bowl, fit the splashguard
  7. Whisk until stiff peaks have formed - 5 minutes, speed Max
  8. Remove the bowl from the machine
  9. Then add the flour mixture and fold carefully until combined with the egg mixture
  10. Transfer the mixture into the tin
  11. Bake until the sponge is golden and springy to touch - 8-10 minutes, 180ºC
  12. Line a work surface with parchment paper
  13. Dust the parchment paper with sugar to prevent the sponge from sticking
  14. Turn the sponge onto the parchment paper and remove the old parchment paper
  15. Let cool - 5 minutes
  16. Roll the sponge into a log, starting from the shortest edge and let cool completely
  17. Making the filling:
  18. Clean the appliance bowl and fit the Whisk Tool
  19. Add the ingredients into the appliance bowl, fit the splashguard
  20. Whisk until thickened - 1 minute 20 seconds, speed Max
  21. Carefully unroll the sponge and spread a layer of apricot jam onto the roll
  22. Then spread a layer of the whipped cream
  23. Gently roll up the Swiss roll again and place on a tray or plate
  24. Chill in the fridge - 10 minutes
  25. Dust with icing sugar
  26. Serve
