A hearty, comforting soup that is great for crisp Autumn nights. We recommended using Crown Prince, Uchiki Kuri or Kabocha pumpkin varieties, but most cooking pumpkins or squash will work.

Step preview

  1. Preheat the oven - 180ºC
  2. Assemble the Direct Prep attachment with the Thick slicing disc, and turn it to position 1
  3. Slice the pumpkin into a large bowl
  4. Then add the next ingredients, and toss to combine
  5. Transfer the pumpkin to a baking tray
  6. Roast until soft - 15 minutes, 180ºC
  7. Remove from the oven and let cool
  8. Fit the Knife Blade (or Max blade for kCook Multi)
  9. Transfer the roasted pumpkin and garlic into the appliance bowl
  10. Then add water, attach the lid with the filler cap fitted
  11. Blend until smooth - 30 seconds, speed 8
  12. Transfer the pumpkin puree into a clean bowl and set aside
  13. Clean the appliance bowl and fit the Stir Tool
  14. Add olive oil into the appliance bowl, attach the lid without the filler cap
  15. Heat until hot - 140ºC, speed 3
  16. Then add the next ingredients
  17. Cook until softened - 7 minutes, 120ºC, speed 3
  18. Then add the next ingredients
  19. Cook until combined - 2 minutes, 120ºC, speed 3
  20. Then add pearl barley
  21. Cook until combined - 5 minutes, 120ºC, speed 3
  22. Then add the pumpkin puree and the next ingredients
  23. Cook until the barley is cooked and the soup thickened - 25 minutes, 98ºC, speed 2
  24. Serve
