A hearty, comforting soup that is great for crisp Autumn nights. We recommended using Crown Prince, Uchiki Kuri or Kabocha pumpkin varieties, but most cooking pumpkins or squash will work.

Step preview

  1. Preheat the oven - 180ºC
  2. Add the ingredients into a baking tray and toss to coat
  3. Roast until soft - 20 minutes, 180ºC
  4. Remove from the oven and let cool
  5. Transfer the roasted pumpkin and garlic into the Blender attachment
  6. Then add water
  7. Blend until smooth - speed 5
  8. Remove the attachment from the machine
  9. Fit the Stir Tool and Stir Assist clip
  10. Add olive oil into the appliance bowl
  11. Heat until hot - 1 minute, 120ºC, speed Off
  12. Then add the next ingredients
  13. Cook until softened - 7 minutes, 120ºC, speed Stir 2
  14. Then add the next ingredients
  15. Cook until combined - 2 minutes, 120ºC, speed Stir 2
  16. Then add pearl barley
  17. Cook until combined - 5 minutes, 120ºC, speed Stir 2
  18. Then add the pumpkin puree and the next ingredients
  19. Cook until the barley is cooked and the soup thickened - 25 minutes, 100ºC, speed Stir 3
  20. Serve
