This sweet bread infused with citrus, candied peel, sultanas, rum and vanilla is a festive treat worth taking time over. This recipe has been developed especially for the kCook Multi and it requires a 6 hour prove. You will also need a 15cm (6") panettone case and two metal skewers. Hanging the loaf upside-down after baking prevents it from collapsing in on itself whilst it is still warm.

  2. Add dried yeast, bread flour, caster sugar and water to the kCook bowl
  3. Fit kCook bowl to kCook Multi
  4. Attach lid to kCook bowl with filler cap fitted
  5. Heat with filler cap fitted - 2 min, 30°C, speed 5
  6. Heat with filler cap fitted - 10 min, 30°C
  7. Then add bread flour, caster sugar, unsalted butter and water to the kCook bowl
  8. Heat with filler cap fitted - 2 min, 30°C, speed 6
  9. Heat with filler cap fitted - 30 min, 30°C
  10. Then add bread flour, caster sugar, unsalted butter and water to the kCook bowl
  11. Heat with filler cap fitted - 2 min, 30°C, speed 6
  12. Heat with filler cap fitted - 30 min, 30°C
  13. Then add bread flour, caster sugar, unsalted butter, egg yolk, salt and water to the kCook bowl
  14. Heat with filler cap fitted - 2 min 30 sec, 30°C, speed 5
  15. Add unsalted butter and icing sugar to a clean medium bowl
  16. Mix until combined
  17. Transfer content of medium bowl to kCook bowl gradually while machine is running
  18. Mix with filler cap removed - 4 min, 30°C, speed 5
  19. Mix with filler cap fitted - 5 min, 30°C, speed 6
  20. Then add orange zest, vanilla extract, candied citrus peel, dark rum, water and sultanas to the kCook bowl
  21. Heat with filler cap fitted - 2 min, 30°C, speed 4
  22. Remove midi blade from kCook bowl
  23. Heat with filler cap fitted - 45 min, 30°C
  24. Transfer content of kCook bowl to work surface
  25. Fold
  26. Fit kCook bowl to kCook Multi
  27. Transfer content of work surface to kCook bowl
  28. Attach lid to kCook bowl with filler cap fitted
  29. Heat with filler cap fitted - 30 min, 30°C
  30. Transfer content of kCook bowl to work surface
  31. Shape
  32. Transfer content of work surface to round pan
  33. Cover with plastic wrap
  34. Prove until doubled
  35. Pre-heat oven - 160°C
  36. Brush with milk
  37. Bake - 1 hr, 160°C
  38. Let cool
  39. Dust with icing sugar
  40. Serve
