A light dessert which combines chocolate mousse with a creamy orange syllabub. You can be creative when layering the mousse and cream by carefully resting the serving glasses at an angle.

Step preview

  1. Attach Creaming beater
  2. Add unsalted butter, egg yolk, dark chocolate and rum to the EasyWarm Bowl
  3. Mix until melted - approx 10 min, 7, Stir 1
  4. Remove the bowl from the machine and set aside
  5. Attach Whisk
  6. Add whipping cream to the Kenwood Bowl
  7. Whisk until light and fluffy - approx 1 min 40 sec, Speed 5
  8. Transfer cream to medium bowl then set aside
  9. Clean Kenwood Bowl
  10. Attach Whisk
  11. Add egg white to the Kenwood Bowl
  12. Whisk and continue - approx 2 min, Speed Max
  13. Add caster sugar to the Kenwood Bowl gradually while machine is running
  14. Retrieve the melted chocolate and the whipped cream
  15. Fold cream into chocolate mixture
  16. Spoon one third of egg whites into the chocolate mixture
  17. Mix until combined
  18. Spoon another third of egg whites into the chocolate mixture
  19. Fold gently
  20. Repeat with the rest
  21. Pour chocolate mixture into 4 drinking glasses
  22. Chill in fridge - 1 hr
  23. Clean Kenwood Bowl
  24. Attach Whisk
  25. Add whipping cream, grand marnier, icing sugar and orange juice to the Kenwood Bowl
  26. Whisk until thickened - Speed 5
  27. Spoon cream into 4 drinking glasses on top of the mousse
  28. Chill in fridge - 1 hr
  29. Serve
  30. Garnish with candied citrus peel
